We express a classic technique, influenced by Mediterranean and Latin American cuisine. Chef Scanu’s style has evolved from the classic/purist French and Italian technique to the more cosmopolitan fusion and avant garde style, to end with a personal interpretation of food as an art and love expression that is very difficult to describe. Perhaps it can be called an eclectic approach—respecting the classics but treating the ingredients with the highest level of professionalism and love.
